I thought I would share a few of my all-time
favorite
Christmas cookie recipes with you. These recipes get made almost every
year in our home. Don't settle for purchased bakery cookies, they
really are just not as good as homemade.Don't worry, I also have links to some Christmas brunch menus listed below, but around this time of year cookies seem to be just about everywhere. And since you need a little bit of sweet to balance out the savory, there is no reason in my book why some yummy Christmas cookies won't fit the part for your holiday brunch. Find recipes below for Russian Teacakes, date pinwheels, peanut butter cookies, and butter spritz. I will be doing my baking this weekend. I know many of you have quite a head start, but there will still be plenty enough time for some baking yet. So make some of your favorite cookies to serve with your Christmas brunch. November Pie Server Contest Results I wanted to thank everyone that took the time to write down their thoughts and place an entry into last month's contest. The wining entry from last month's pie server contest goes to Tracy K. from Georgia. Here is her entry: This Thanksgiving I am thankful for my family. I know, it sounds cliché, but its true. I have family all over the country, and yet we talk, and we laugh, and we gather together over the years to just be together. We gather to celebrate the milestones of life - marriages, anniversaries, babies. We gather to remember and reminisce during the heartbreaks of divorce, tragedies and death. There is nothing more important than being there for family and for that I am thankful. This year, we moved away from family and they are coming to visit for Thanksgiving. Hooray! Christmas Cookie Recipes Russian Teacakes 1 cup soft shortening or butter 1/2 cup confectioner's sugar (aka. powdered sugar) 1 teaspoon vanilla 2-1/4 cup flour 1/2 teaspoon salt 3/4 c. nuts, chopped Mix first three ingredients. Blend rest in. Chill until dough is firm. Roll into 1" balls. Bake at 350 degrees on an ungreased cookie sheet for 10 minutes. Roll in confectioners sugar immediately and then again when cool. Date Pinwheels 1 cup shortening or butter 3 eggs 1/2 teaspoon baking soda 2 cups brown sugar 4 cups flour Cooked date filling made from 1 package dates Mix well and roll 1/4" thick. Spread with date filling and roll like a jelly roll. Chill hard or freeze and slice thin, approx. 1/4". Bake until brown at 350 degrees. Peanut Butter Cookies Note: These are delicious but very delicate. They do not travel well unless packed carefully. They are also one of my favorites any time of year. This was my Grandmother's recipe. 1 cup shortening or butter 1/2 cup + 1/3 cup cup granulated sugar 1/2 cup + 1/3 cup brown sugar 2 cups peanut butter 1-3/4 cup flour 1 teaspoon vanilla 3 egg yolks 1 teaspoon baking soda Combine all ingredients. Bake at 350 degrees. Makes 4-5 dozen. Butter Spritz 1 cup butter 3/4 cup sugar 1 egg 1 teaspoon almond extract 2-1/4 cup flour 1/4 teaspoon salt 1/2 teaspoon baking powder Mix well. Dough should be soft for cookie gun. Place dough in cookie gun and make into wreath or candy cane shapes. Decorate with sprinkles or colored sugar. Bake in 375 degree oven for 10 minutes. Christmas Brunch Menus Traditional Brunch Homemade Belgian waffles topped with real whipped cream and blueberry syrup and served with sausage, a mimosa, and a hot fruit compote. Holiday Brunch featuring a make-ahead breakfast casserole made with ham, bacon, hash browns and cheese, cranberry muffins with cinnamon sugar topping, poached pears with cranberry sauce, and spiced tea. Holiday Brunch 2 with Eggs Benedict, cucumber salad, raisin muffins, and a fresh fruit salad. Find more ideas for brunch to serve with your Christmas cookie recipes. Need
