This month: A Christmas Brunch MenuIn this issue of the Breakfast and Brunch Express, find recipes and menu ideas for hosting a Christmas Brunch including make-ahead breakfast casseroles, rum cake, eggnog, and more.
Well, the holidays are getting underway around here. Our Christmas tree is up, our home is decorated and I just finished baking 9 dozen cut-out cookies this past weekend. It has been busy to say the least! This month's newsletter focuses on easy make-ahead dishes for when you have holiday guests arriving. Having much of the food prepared ahead of time makes your life a bit easier so you can relax and enjoy the Christmas season with your family members and close friends. Many of the brunch recipes below like the make-ahead breakfast casseroles travel well, so if you are the ones traveling to relatives and are asked to bring a dish to pass, the recipes below may be some good choices. They are some of my favorite brunch ideas and I hope you like them as well. Many of you have already begun your Christmas baking. is a wonderful make-ahead breakfast casserole that is hearty and
filling. Make this a day ahead for when you are expecting your friends
and family to visit. A
make-ahead
breakfast casserole made with bacon, bread, Swiss
cheese,
onion, milk and eggs. Make this egg casserole the night
before and
serve it for breakfast or brunch.
When you know you will be entertaining overnight guests, this is a nice
recipe to make because it only takes about 20 minutes to prepare the
night before. A
breakfast
casserole
recipe made with Italian sausage, hash brown
potatoes, cheddar cheese, sour cream, and French fried onions. Serve
this dish for a hearty breakfast or brunch. A
make-ahead breakfast casserole
made with bacon, ham, hash brown potato patties, mushrooms,
eggs, and cheddar cheese. Because all of the
ingredients go together in the pan this breakfast food bakes in, you
will have very little clean up or dishes to do. Definitely an added
plus!
Cakes and Puddings Blueberry Coffeecake:
This blueberry coffee cake recipe is made with butter, sugar,
eggs, and milk. This coffee cake has a butter crumb topping and uses
sweet blueberry pie filling.
This cake recipe is quick and easy. It takes about 15-20 minutes prep.

Vanilla Sauce:

An easy bread pudding recipe made with cinnamon bread,
cranberries, cherries, and raisins. This bread pudding has vanilla
sauce in the recipe, making it rich and moist.
This is a festive old-fashioned bread pudding that is great for the
holidays or for when you just need a little comfort food in your life.
Grand Mariner liqueur makes this bread pudding just a bit special. Rum Cake: An
easy rum cake recipe made with yellow cake mix, French
vanilla pudding, Bacardi Rum, and topped with chopped pecans.
Serve this homemade cake for a special Christmas party or brunch menu.
This is a special Christmas cake that is incredibly moist and actually
very easy to make and Oh, so good! Peach Cobbler: An
easy peach cobbler recipe made with fresh or canned peaches and
surrounded by a moist cake. Serve as part of a brunch menu for a little
bit of sweetness or use as an old-fashioned dessert.
With only 15 minutes preparation, it is a quick and easy recipe that
will have you reminiscing about the peach cobbler your grandmother used
to make.
Holiday Drinks & Beverages Eggnog: This homemade
eggnog is smooth, rich, and creamy because it is made from whole milk,
cream, eggs, nutmeg, and rum. Serve for a Christmas brunch or evening
Christmas Party or house hopping. Can be made with real rum or rum
flavoring for a non-alcoholic version. Brandy Slush is a
delicious frozen drink made with orange juice, lemonade, and green tea.
Just add your favorite liquor like brandy, vodka, or whiskey. This
slush recipe adds a bit of pizazz to your Christmas brunch menu. A
festive Christmas
Punch recipe made with Southern Comfort, 7-Up, lemon
juice, orange juice, and lemonade.
Serve this fruit punch for a holiday brunch or an evening Christmas
party.
The fruit juices offset the sweetness of the Southern Comfort, making a very drinkable alcoholic punch that is not too sweet. Non-Alcoholic
Spiced Tea:
Spiced
tea is made with orange, cranberry, and apple juice
and flavored
with cinnamon candies, cinnamon sticks, cloves, and sugar.
Serve this
