I hope everyone had some time to visit with their family and friends during the holidays. If you are like me, you perhaps indulged in a few too many large meals and a plethora of Christmas cookies. By now, I am ready to get back to normal eating and lighten up the brunch recipes. Whether you have just started a diet, or just need a break from the heavy holiday eating, I wanted to provide you with some easy breakfast recipe choices that are a bit on the lighter side to give you a healthy balance.
