Hello!This month: Christmas Brunch Recipes
In this issue of the Breakfast and Brunch Express, find some of my favorite Christmas brunch recipes like Eggs Benedict, waffles, rum cake and more.
Well, I hope your holidays are not too busy yet. I feel a bit behind myself, as I have only put up about half of the Christmas decorations and have not yet started writing out Christmas cards. The tree goes up this weekend. Even though we are all probably busier than normal, it is still nice to be able to find time to talk to neighbors and friends over a good meal. Oh, and make sure you put out the cookies, sweets and cakes. Homemade is better, but store bought will do in a pinch. If it were me I would expect a little extra sweet on the brunch table during the holidays. (I'm not really trying to promote weight gain here, just think of it as a way to distribute some of those baked goods you made. :) Yes, I am planning on providing some healthy breakfast recipes in January! Have fun and enjoy it all now. A weekend brunch is a little more relaxed and is also a great time to give out a small gift of homemade sweets or a small cake for your guests to take home. Oh and speaking of gifts, if you or someone you know likes handmade quilts, check out my mom's quilt shop. She sells on Etsy.com which is a great shopping site for handmade items of all types.

Christmas Brunch Recipes
Eggs Benedict:
One of my favorite breakfast and brunch foods, Eggs Benedict is made with English muffins, Canadian Style Bacon, poached eggs and Hollandaise sauce. If you have not had this dish you are in for a treat!
Traditional Brunch Menu with Waffles:
Serve this homemade recipe for waffles, blueberry syrup, real whipped cream, sausage, and a warm fruit compote for a Christmas or holiday brunch. What a way to indulge! If you are expecting guests for the holidays, treat them to some delicious homemade cooking, courtesy of you. Your friends and family will remember you for it and want to be asked back to visit again.
Rum Cake:
Oh yes, you need to make a rum cake for Christmas! The best part about the cake is that it freezes well and you can enjoy the leftovers in July. Really! This one is really good and soaked with real rum. Make this cake now so you have some time to enjoy it. It will be a hit for brunch or an evening dessert.
Stuffed French Toast with Sugared Berries:
This French toast is stuffed with strawberry jam and ricotta cheese. Serve this for a decadent brunch with sweetened strawberries or blueberries spooned over the top and dusted with confectioners sugar.
