Hello!This month: Brunch Potato Recipes
In this issue of the Breakfast and Brunch Express, find comforting potato recipes for brunch and dinner.
Well, my garden is done for the year and all of the vegetables have been processed. The crisp Fall weather is here and I am starting to revisit some of those recipes that I have not made all summer long. When the weather becomes cooler, foods that are a bit more substantial come to mind. For me, potatoes are definitely on the list of comfort foods because they are so satisfying and versatile.
Each of the potato recipes below make a nice side dish for a brunch menu or main course dinner. Serve them with your favorite eggs and a side of toast and jam. Although I have listed only four of my favorites below, this page on my website contains a complete list of my

Potato Recipes for Brunch and Dinner
Scalloped Potato Recipe:
Scalloped potatoes are a nice addition to a brunch menu or as a side dish for a main course dinner. Here is a recipe where a food processor comes in handy for slicing the potatoes. They are cooked with heavy cream and butter and topped with a coating of crushed Saltine crackers.
Fried Red Potatoes and Ham:
This was so good when I made this red potato recipe for the photo! The potatoes are buttery and offer a bit of extra nutrition because the skins are left on. Add diced ham, green onion, salt and pepper for a quick and easy side dish that is an excellent complement to fried or scrambled eggs.
