Hello!This month: Summer Salad Recipes
In this issue of the Breakfast and Brunch Express, find useful new recipes for summer salads and picnic foods.
Well, I have just sent my 5 year old off to Kindergarten a few days ago, as many of you may have and it is really hard to believe he is ready for school. It seems like the summer is almost over, but there will still be some nice weekends ahead here in September and possibly even into October. This would be a great time for a late summer or early fall weekend picnic. The salad recipes below make some nice choices for picnic foods that can be made ahead and taken to a family picnic or pot luck dinner. Because many of them have a stronger flavor, they are good choices to take along for a group as everyone gets to have a little bit, and that way it does not become too overpowering when they are served with many other foods.
Summer is starting to come to an end, but there is still time for a late summer or early fall picnic. Here are some summer salad recipes that make good picnic food. They also can be combined with a savory brunch menu for something a little different. This page contains a complete list of my

Summer Salads and Picnic Foods
Bean Salad:
This bean salad recipe started out as a three bean, but ended
up with four different beans; green, yellow, kidney, and butter beans. It has a vinegar and sugar dressing. Bits of shredded carrotsand onion add color and flavor. If you have ever had three bean salad on a salad bar at a restaurant, this is the same stuff (very popular where I am from). Either you love it or you hate it! There usually is not a lot of in-between.
Taco Salad:
A taco salad recipe made with ground beef, lettuce, kidney
beans, taco chips, and Western dressing. This recipe has been in our family for at least 25 years and is always a favorite at a pot luck or picnic. It also makes a colorful addition to a savory brunch menu. This is a large recipe that can be cut in half, but usually there is no problem finishing the leftovers.
