This month: Summer Vegetable Recipes

In this issue of the Breakfast and Brunch Express, find useful new recipes for summer vegetables.

I hope everyone has been having a pleasant summer! Between graduation parties, family gatherings, county fairs and all the other things going on, the summer has been whizzing by.

I have been out in our garden weeding, much like many of you and right now in our neck of the woods, the zucchini and cucumbers are ready to harvest. I will have some of those recipes up on my website soon.

Vegetables are not normally considered to be a common food that you eat for breakfast or brunch, but there is no reason not to add some green to your brunch menu. Veer away a bit from all of the sweets and add a little green to your brunch menu. Doughnuts and coffee cakes are always tasty, but with the addition of any of these vegetable recipes below, you can add some of those missing nutrients into your diet.

Try baked spinach, scalloped asparagus casserole, or stuffed green peppers. Many of these vegetable recipes can also be used as a side dish for dinner or supper.

Do enjoy and add some variety to your next brunch or dinner. On this page you can find all of my current vegetable recipes.

Summer Vegetable Recipes

Stuffed Green Peppers
Stuffed Green Peppers: This green pepper recipe is stuffed with beef, rice and tomatoes. This would work well for a later brunch or dinner. These do take a bit of prep time, but the results are worth it. You can also use red bell peppers and add a little bit of color to your dinner table.

Baked Asparagus Recipe Baked Asparagus: When asparagus is in season, be sure to eat as much of it as you can. This simple recipe is made with fresh asparagus, butter, salt, pepper and garnished with fresh squeezed lemon.



Vegetable Casserole Recipe

Vegetable Casserole Recipe: A flavorful vegetable recipe made with frozen mixed vegetables, sour cream and cheddar cheese. It also has a crunch topping of buttered bread crumbs. It can be served for brunch or dinner.

Green Bean Casserole: This all time favorite recipe is made with either fresh or frozen green beans, water chestnuts, cream of celery soup and topped with French fried onions. Memories of home will come to mind when these green beans make their way to the brunch table.

Scalloped Asparagus Casserole: A scalloped asparagus recipe that is baked in the oven with milk, cheese, eggs, and topped with buttered bread crumbs. The creamy sauce is quite an interesting variation on the standard steamed asparagus.



Baked Spinach Baked Spinach Recipe: A flavorful baked spinach recipe made with frozen spinach, sour cream, onion soup mix and Parmesan cheese.

A Helpful Hint:

Add 1/2 teaspoon to 1 teaspoon sugar to carrots, broccoli, cauliflower or turnips while they are cooking and notice the improvement in flavor.
