Scalloped Asparagus Casserole Recipe



AsparagusA unique asparagus casserole recipe that is made from fresh asparagus, milk, cheese, eggs, and buttered bread crumbs.

It is baked in the oven and has a nice creamy sauce when it is finished baking.

Serve this vegetable casserole in the spring when asparagus is in season for a weekend breakfast or brunch recipe.

Scalloped Asparagus Casserole

Prep Time:  30 minutes

Ingredient List:

1-1/2 pounds asparagus
6 Tablespoons butter
6 Tablespoons flour
1/2 teaspoon pepper
2 Cups milk
3/4 cup diced cheese
2 Tablespoons minced onion
5 hard boiled eggs, diced
1/2 cup buttered bread crumbs

Kitchen Equipment Needed

9" x 13" baking pan

Instructions:
Step 1
:  Cook asparagus until tender crisp and drain.

Step 2:  In a saucepan, melt butter, stir in flour and seasonings and stir until smooth.

Step 3:  Add milk gradually. Cook over low heat, stirring until mixture is smooth.

Step 4: Remove from heat and stir in cheese, onion, and bread crumbs.

Step 5: Combine sauce, asparagus, and eggs in a 1-1/2 quart casserole dish.

Step 6: Bake at 350 degrees for 30 minutes.

This asparagus casserole recipe serves 6.
