Bacon Cheddar and Onion Quiche

Bacon Cheddar and Onion QuicheThis bacon cheddar and onion quiche recipe has a wonderful savory combination of crisp fried bacon, sharp cheddar cheese and mellow onion.

With only 30 minutes prep time you can make this quiche for breakfast or brunch this weekend!

If sharp cheddar cheese is too strong for you, consider mild cheddar instead. You can also use a stronger onion if you prefer more onion flavor.

Low sodium bacon or turkey bacon can be used as well as a replacement for traditional bacon if you have a specific dietary need for this bacon chedar and onion quiche. This quiche recipe also makes a nice dish for dinner or supper.

Bacon Cheddar and Onion Quiche Recipe

Prep Time: 30 minutes (includes all frying, cutting and preparation time but does not include any thawing time for frozen bacon or washing dishes.)

Bake Time: 60 minutes

Ingredients:

12 slices bacon (1 standard size package-about 1/2 pound) thawed and crisply fried and crumbled
1 1/2 cups shredded sharp cheddar cheese
1/3 cup finely chopped sweet onion (about 1/2 of a medium size onion)
2 cups milk
1/2 cup biscuit mix
4 eggs
1/2-teaspoon salt
1/4-teaspoon pepper

Step 1: Preheat your oven to 350 degrees F.

Step 2: Fry your bacon in a frying pan on medium-to medium-high heat or in the microwave until the bacon is very crisp and easy enough to crumble. Drain on paper towel and cool until you are able to handle the bacon.

While the bacon is frying:

Step 3: Grate your cheddar cheese and place aside.

Step 4: Peel and finely chop your onion and place aside.

Step 5: In a medium bowl, use a whisk to combine the milk, biscuit mix, eggs, salt and pepper.

When bacon is cool:

Step 6: Crumble bacon into small pieces and place aside.

Step 7: Grease a 9 or 10-inch pie plate or quiche baking dish with cooking spray or butter. Layer half of the crumbled bacon, onion and cheddar cheese evenly over the bottom of the dish. Repeat with the remaining half of bacon, onion and cheese.

Step 8: Pour the egg and milk mixture evenly over the bacon, cheese and onion. Make sure the liquid only comes to within 1/4" of the top edge of the baking dish.

Step 9: Place in oven and bake for 60 minutes.

To test for doneness: Insert a knife into the center of the bacon cheddar and onion quiche. The center should be firm and no liquid should come out.

Let cool and set for 5 minutes and it will be ready to eat. Cut into 6 or 8 pieces.

Serves 4-6.
