Versatile Basic Muffin Recipe



Image of Chocolate Chip MuffinsTry this versatile basic muffin recipe and add chocolate chips, white chocolate chunks, dried fruit, raisins, cherries, apricots, or dates. Serve these muffins for breakfast or brunch.

This is an old basic white muffin recipe and very good. It came from a freshman Home Economics class in the early 1960's.

You can add anything of your dreams to this recipe...chocolate chips are wonderful, white chocolate chunks are even better, raisins are great. Any dried fruit is super...cherries, apricots, even dates.

This recipe is from my mom's recipe box collection.

Prep Time: 15 minutes

Baking Time: 25 minutes

Ingredient List:

2 cups flour
1-1/3 Tablespoons baking powder
3/4 teaspoon salt
2 Tablespoons sugar
1 egg
1 Cup milk
1/4 Cup melted butter

Optional

1 cup of any of the following:

dried fruit such as raisins, dates, cherries, apricots or chocolate chips or chunks.

Instructions:

Step 1: Preheat oven to 350 degrees.
Step 2: Sift dry ingredients in large bowl.
Step 3: Beat egg until thick and add milk and butter, blend with beater.
Step 4: Make a well in the flour mixture and add egg mixture all at once. Stir quickly, just until all flour is moistened.
Step 5: (Optional) Fold in 1 cup of dried fruit, nuts or chips of your choice.
Step 6: Fill muffin tins that have been lined with paper liners.
Step 7: Bake for 20-25 minutes.

Makes 12 muffins.
