Blueberry
Coffee Cake Recipe

This blueberry coffee cake recipe is made with butter, sugar, eggs, and
milk. This coffee cake has a
butter crumb topping
and uses sweet
blueberry pie filling.
This
cake recipe is quick and easy. It takes about 15-20 minutes
prep. time and 1 hour bake time. Serve this sweet cake warm
scooped out with a spoon or wait until cool and cut into squares.
Breakfast
and brunch wouldn't be the same without a blueberry coffee cake on the
table!
Blueberry
Coffeecake Recipe
Baking Time:
60 minutes
Ingredients:
1-1/4 cups all purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, melted
1/2 cup milk
1 egg
1 teaspoon vanilla extract
1/4 teaspoon lemon extract
1-21 oz. or 22oz. can of blueberry pie filling
Streusel
Topping
1/2 cup all purpose flour
1/4 cup granulated sugar
2 Tablespoons melted butter
Instructions:
Step 1:
Preheat your oven to 350
degrees.
Step 2:
Grease and flour a 9" x
9" square glass or ceramic baking dish or metal pan.
Step 3: Mix
together the flour,
sugar, baking powder, baking soda, and salt in a large bowl. A fork
works well for this.
Step
4: To
the flour mixture, add 1/2 cup melted butter, milk, egg and vanilla.
Step 5: With
a spoon, beat until
well mixed and then pour the batter evenly into your greased and
floured pan.
Step 6: In a
separate small bowl,
using a fork, combine
the ingredients for the streusel topping; flour, sugar and melted
butter. Stir until the mixture resembles coarse crumbs.
Step 7:
Sprinkle 1/2 of crumb
mixture evenly over the top of batter in the pan.
Step 8: Stir
lemon extract into
the can of blueberry pie
filling with a spoon or narrow spatula. Spread the pie filling over the
top of the crumb mixture in the pan.
Step 9:
Sprinkle with the
remaining crumb mixture.
Step
10: Bake
for 1 hour or until top of coffee cake is golden brown.
