Favorite Bran Muffin

Image of Bran Muffins A healthy bran muffin made with bran flakes, milk, egg, and butter. Serve these muffins with softened cream cheese or a low sugar jam as part of your next breakfast or brunch.

These muffins taste great, are higher in fiber than a traditional muffin, and can be part of a diet to lower your cholesterol levels. Bran flake muffins are a quick and easy breakfast and brunch staple.

They also taste wonderful with butter and low sugar apricot jam. Try them with softened cream cheese on top for a nice change of pace. Prep Time: 15 minutes

Baking Time: 25 minutes

Ingredient List:

1 cup Bran Flakes cereal
1/2 cup milk
1 egg
3 Tablespoons soft butter
3/4 cup flour
1/4 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt

Baking Equipment Needed

mixing bowl
paper lined muffin tin

Instructions:

Step 1: Preheat oven to 350 degrees.

Step 2: Combine bran flakes and milk in a mixing bowl and let stand until moistened.

Step 3: Add the egg, butter, flour, sugar, baking powder and salt. Stir ingredients together just until combined. Do not over-mix.

Step 4: Fill paper lined muffin tins 1/2 to 2/3 full.

Step 5: Bake at 350 degrees for approximately 25 minutes.

Makes 12 muffins.
