This month: Summer Brunch Vegetables

Hello Everyone!

I hope your days have been well. It is warm and humid now in Wisconsin and with the amount of rain we have had this summer, the mosquitoes are so big that they now have landing gear! The garden has grown well because of the rain and that is why I wanted to share some summer garden vegetable recipes that can be served as part of a savory brunch.

Vegetables are not usually thought of as something to be served for brunch, but there are many ways you can incorporate vegetables into a brunch menu, including cold salads, breakfast burritos, and stuffed green peppers.

Many times, when serving a brunch, too many of the items are sweet and there is not enough balance in the flavors.  Adding a cold salad like this cucumber salad or marinated tomatoes adds a bit of contrast and balance to the menu. Here are a few more brunch menu ideas to try.

Many of these cold salads can be used for a summer picnic food or as a side dish for dinner as well. They keep a long time and can be prepared in advance.

I hope you have a chance to enjoy what summer has to offer in the way of fresh vegetables and find a recipe or two to incorporate into your next brunch menu.

Happy Eating!

Laura Warnke

***The next issue of this newsletter is scheduled for Wednesday, September 10, 2008. Next month's topic: A Tea Brunch Menu

Also, check out the vegetable recipe cookbooks below. There are six different cookbooks each with a different vegetable highlighted. Find recipes for zucchini and squash, tomatoes, mushrooms, herbs, and more.

A mini celebration!  This newsletter now has over 1,000 subscribers as of July 31, 2008. Thank you everyone for your continued support, ideas, and readership.

Many thanks!

I just wanted to take a moment to thank everyone who filled out last month's survey for what you wanted to see on this site. By far, most of you wanted more brunch recipes in each newsletter, followed by baking how-to videos, cooking magazine reviews, and cookbook reviews. Some of the comments received were asking for healthier low fat breakfast choices, along with Vegetarian recipes, a tea brunch, and breakfast recipes for just one person.

You have given me some wonderful ideas and I will work on gearing the next bunch of newsletters towards some of those ideas. Thank you again!

Quote for the Day:

Bread BasketI am a lonely cook book a sittin' on the shelf.  Although I'm full of goodies, I'm no good there by myself.  I need someone to pick me up and look inside my cover, and if you do I promise you  a new world you will discover.
