This month: Summer Brunch Vegetables
Hello Everyone! I hope your days have been well. It is warm and humid now in Wisconsin and with the amount of rain we have had this summer, the mosquitoes are so big that they now have landing gear! The garden has grown well because of the rain and that is why I wanted to share some summer garden vegetable recipes that can be served as part of a savory brunch. Vegetables are not usually thought of as something to be served for brunch, but there are many ways you can incorporate vegetables into a brunch menu, including cold salads, breakfast burritos, and stuffed green peppers. Many times, when serving a brunch, too many of the items are sweet and there is not enough balance in the flavors. Adding a cold salad like this cucumber salad or marinated tomatoes adds a bit of contrast and balance to the menu. Here are a few more brunch menu ideas to try. Many of these cold salads can be used for a summer picnic food or as a side dish for dinner as well. They keep a long time and can be prepared in advance. topping.
Serve this green pepper recipe as part of your weekend brunch menu or

Three Bean Salad: A

onions, and marinated in a sugar and vinegar dressing. These
