Cheesy Potato Recipe

A cheesy potato recipe made with packaged Au gratin potatoes, ham, peas, and shredded cheese.

Serve this quick and easy potato casserole as a delicious breakfast casserole, brunch recipe or main dish.

The addition of the peas and green pepper add a nice color to the dish.

And, of course there is plenty of cheese to go around.

Try serving these cheesy potatoes with a ham steak or sausage and to keep things a bit lighter, a fruit recipe like poached pears or spice your brunch up a bit with cinnamon apples.

Cheesy Potato Recipe

Ingredient List:

1 package boxed Au gratin potatoes
2-1/2 cups cooked ham, diced into small 1/2" cubes
1 cup canned or frozen peas
1 small onion, chopped (about 1/2 cup)
1 green pepper, chopped
1-1/2 cups shredded sharp cheddar cheese

Kitchen Equipment Needed

Large casserole dish

Instructions:

Step 1: Preheat oven to 400 degrees.

Step 2: Mix potatoes as directed on package in a large casserole dish.

Step 3: Mix in ham, peas, onion, and green pepper.

Step 4: Sprinkle cheddar cheese over top and bake for 30 minutes.

This recipe makes about 6 servings.
