A breakfast casserole made with
Colby
cheese, green onions, fresh mushrooms, bread, and eggs. Serve
this as part of a traditional brunch menu or as a hearty breakfast
recipe.
Colby is a milder and softer cheese than cheddar and should be used
fresh, as it will dry with age. When grated or sliced, this golden
cheese bakes in beautifully and provides the true cheese flavor you
want for a breakfast or brunch casserole.
This is a make-ahead breakfast casserole that is put
together
the night before, refrigerated and baked in the morning. Throw it in
the oven and enjoy a cup or two of coffee with your friends or family
while this bakes on its own. View more breakfast casserole recipes like this Colby cheese brunch casserole.
