Make-Ahead Colby Cheese
Breakfast Casserole

A breakfast casserole made with Colby cheese, green onions, fresh mushrooms, bread, and eggs. Serve this as part of a traditional brunch menu or as a hearty breakfast recipe.

Colby is a milder and softer cheese than cheddar and should be used fresh, as it will dry with age. When grated or sliced, this golden cheese bakes in beautifully and provides the true cheese flavor you want for a breakfast or brunch casserole.

This is a make-ahead breakfast casserole that is put together the night before, refrigerated and baked in the morning. Colby Cheese Breakfast Casserole

Prep Time:  20 minutes

Baking Time:  60 minutes

Ingredient List:

8 slices white sandwich bread
1 Pound Colby cheese, grated
8 eggs
3/4 teaspoon of salt
3 cups milk
3/4 teaspoon of dry mustard
1/2 cup sliced green onions (use more or less to your own taste) 8 ounces sliced fresh mushrooms (use more or less to your own taste)

Kitchen Equipment Needed

9" x 13" baking dish or pan, greased

Instructions:

Step 1: Butter the slices of bread and cut each slice into 1 inch cubes. Place in the bottom of a greased 9" x 13" baking dish or pan.

Step 2: Shred the entire pound of cheese and sprinkle evenly over the bread cubes.

Step 3: Layer sliced onions and sliced fresh mushrooms over the cheese.

Step 4: In a medium size mixing bowl, beat the eggs, milk, salt, and mustard together. Pour over the bread mixture.

Step 5: Cover and refrigerate overnight (minimum of 6 hours).

Step 6: When you are ready to bake, preheat your oven to 350 degrees.

Step 7: Bake the casserole covered for 1 hour.

Step 8: Uncover and put back in the oven for 5 minutes to brown the top.
