Crab Stuffed Eggs

Crab deviled eggs are just as quick and easy to make as regular deviled eggs and are high in protein due to the crabmeat and eggs. They make a perfect food for those on a low-carb diet.

Deviled eggs also make a nice afternoon snack or can be brought to your next family picnic.

Prep Time:  30 minutes

Ingredient List:

6 hard cooked eggs
1 (7-1/2 ounce) can crabmeat, drained and flaked
3 Tablespoons finely snipped chives
1 Tablespoon parsley flakes
1/2 cup mayonnaise
1/2 teaspoon salt

Kitchen Equipment Needed

Medium mixing bowl
Egg serving tray or plate

Instructions:

Step 1: Hard boil eggs as usual. Chill them and peel the shells. Cut eggs in halves lengthwise and place the yolks in a separate bowl.

Step 2: Mash the egg yolks with the flaked crabmeat, chives, parsley, mayonnaise, and salt.

Step 3: Stuff egg whites with the crab meat mixture using a small teaspoon just before serving.

Makes 6 servings (12 pieces).

You can substitute 1/4 cup green onions instead of the chives, but you need to chop them very fine and may want to use a bit less. Chives have a mellower onion flavor than green onions and I think they work better with crabmeat as they are not as overpowering. It depends on your personal taste.
