This tender crumb coffee cake is made with eggs, milk, butter, and sugar and has a sugar crumb crust.

This cake recipe takes only 15 minutes to prepare and about 1 hour to bake.

Ingredient List:
2 cups flour
2 tsp. baking powder
1-1/2 cups granulated sugar
1/2 tsp. salt
3/4 cup butter
1 tsp. vanilla
2 eggs
3/4 cup milk
Baking Equipment Needed
8" x 8" square baking pan or dish, greased and floured
1 medium size mixing bowl
Pastry blender (helpful, but not completely necessary)
Instructions:
Step 1: Preheat oven to 325 degrees.
Step 2: In a medium bowl, mix together the flour, baking powder, sugar, salt and butter as for a pie crust with a pastry blender. Save 1 cup of the crumbs for topping.
Step 3: To the remaining mixture, add the vanilla, eggs, and milk and mix well.
Step 4: Pour batter into an 8" x 8" square greased and floured baking pan. Sprinkle the reserved crumbs on top of the batter.
Step 5: Bake for 50-65 minutes at 325 degrees until a toothpick inserted comes out clean.
Cut into 9 equal servings. Double the recipe for a 9" x 13" pan.
