A
delicious cake doughnut recipe made with flour, eggs, sugar,
vanilla and topped with a vanilla and almond glaze. Serve
these homemade doughnuts for a special breakfast or brunch.
Homemade
cake doughnuts are just the thing to make on a cold winter afternoon or
rainy Sunday. Your home will smell great and your family will be all
smiles after biting into a hot fresh donut.
This
is one of my grandmother’s favorite doughnut recipes and has stood the
test of time. Her original recipe was called “Wonderful
Doughnuts”. And they are indeed wonderful!
Don’t
be afraid of trying to make doughnuts from scratch! I know you can
easily drive to the local bakery and buy doughnuts, but nothing beats
the taste and aroma of making them yourself.
They
take a little bit more time than other breakfast foods, but the results
will be delicious and your friends and family will thank you.
4 cups flour 4 teaspoons baking powder 1/2
teaspoon salt 1/4 cup butter 1 cup sugar 2
eggs 3/4 cup milk 1 teaspoon vanilla ---------------------------------- 1
quart Vegetable Oil for frying ----------------------------------
Kitchen Equipment Needed
1 medium mixing bowl 1 large mixing bowl Deep
Fryer or large 12" deep frying pan or cast iron skillet 2
baking pans (for catching glaze drips) 2 wire racks (for
cooling glazed doughnuts)
Instructions:
Step 1: In a medium mixing bowl, sift
flour, baking powder, and salt. Set aside.
Step
2: In a large mixing bowl, cream the butter. Add sugar and
beat well. Add eggs and beat well.
Step
3: Add milk and vanilla and stir until combined.
Step
4: Slowly add flour mixture and mix until dough holds
together. Roll into a ball.
Step 5:
Cover and chill 2 hours.
Step 6:
On a floured board, roll out doughnut dough to 1/3" thick and cut with
a donut hole cutter.
Step 7:
Heat vegetable oil in pan or deep fryer to 365 degrees and fry until
lightly golden brown.
Step 8:
Drain on a plate lined with paper towel briefly and then dip into the
bowl of hot glaze.
Enjoy these
dougnnuts warm and fresh as is or dip in a vanilla glaze and drain on a
wire rack set inside of a baking sheet. (recipe below).
Vanilla
Glaze:
3 cups confectioners
sugar (powdered sugar) 1/3 to 1/2 cup milk 1
teaspoon vanilla 1/2 teaspoon almond flavoring
In
a medium mixing bowl big enough to dip your doughnuts, stir together
all glaze ingredients until there are no lumps. Set aside until ready
to dip the hot doughnuts.
