A
tasty egg salad recipe that is simple and easy to make with hard
cooked eggs,
mayonnaise, and pepper. Egg salad can also be served on top
of crackers as part
of a brunch menu or as an appetizer.
An
egg salad sandwich is one of the most basic recipes for hard cooked
eggs. Since it can be ready to eat in about 10 minutes it can be packed
for a nutritious high protein lunch. Try changing the bread to
something with a little more body, such as a French or Italian bread,
rather than the standard store bought breads. It will make a much
better tasting sandwich.
To serve egg
salad on
crackers for part of a brunch menu, use a quality cracker
with a mild
flavor such as butter, sesame, or wheat. Place a tablespoon
of egg salad on each, top with 1 piece of sliced green olive and
sprinkle with paprika. Place on a tray to serve for brunch or as a
party appetizer.
6 hard cooked eggs 1/4-1/2 cup
Hellman's Real Mayonnaise 1/2 to 1 teaspoon fresh ground
pepper 8 slices bread (2 per serving)

Instructions:
Step 1: Peel 6
hard cooked eggs and rinse if necessary to make sure there is no shell
left on the egg. Pat dry.
Step
2: Place all in a medium sized bowl and mash the
eggs
with a fork until they are relatively uniform in size.
Step
3: Add in 1/4 cup mayonnaise to start. Add more
mayonnaise if needed to make a paste-like consistency, up to 1/2 cup.
Step
4: Grind the fresh pepper to taste and mix in.
Step
5: Serve on a soft bread with a crusty shell.
Note:
You may also add salt if desired, but I feel the
mayonnaise
adds enough flavor on its own that you do not need any extra salt. If
you choose to add salt, do so sparingly in small increments.
