Fruit Cocktail Coffee Cake

This fruit cocktail coffee cake with cream cheese frosting is made with canned fruit cocktail, egg, sugar, and chopped nuts. Serve for breakfast or brunch.

The preparation on this recipe is quick and easy. You can have this coffee cake in the oven in about 10-15 minutes.

You frost this while warm and is delicious served either warm or cold.

Who doesn't like a little bit of sweetness with their coffee? It is a very nice looking cake to serve when company comes to visit.

I will warn you that this is a particularly sweet tasting recipe, so if that is not to your liking, you may wish to choose another recipe.

This recipe is from my Grandmother's recipe box collection.

Prep Time: 15 minutes

Baking Time: 35 minutes

Ingredient List:

1 Cup flour
3/4 teaspoon baking soda
1 Cup sugar
1 Egg
1 teaspoon vanilla
1 Can (8 3/4 oz.)fruit cocktail
1/2 Cup chopped or ground nuts, optional

Baking Equipment Needed:

8" x 8" square pan or similar size

Instructions:

Step 1: Preheat oven to 350 degrees.

Step 2: Sift together flour and baking soda in a small bowl.

Step 3: Combine sugar, egg, vanilla, and fruit cocktail with juice. Stir well.

Step 4: Add the flour mixture to the creamed mixture and mix.

Step 5: Fold in the chopped nuts.

Step 6: Pour the batter into an 8" x 8" x 2" cake pan. Bake for 30-35 minutes, until golden brown.

Step 7: Frost immediately.

Cream Cheese Frosting

1/4 cup butter, softened
1 pkg. (3 ounces) cream cheese, softened
1 Cup powdered sugar (confectioner's sugar)
1/2 teaspoon vanilla extract

Blend all ingredients together until smooth. Frost cake while warm.
