Prep Time: 30 minutes

Baking Time: 15 minutes

Ingredients:

1 cup fresh raisins
1 cup water
1/2 cup soft butter
3/4 cup sugar
2 eggs
1-1/2 cups sifted flour
1 teaspoon baking powder

Instructions:

Step 1: Combine raisins and water in a small saucepan. Bring to a boil; reduce heat to a simmer and cover. Simmer for 20 minutes.

Step 2: Drain raisins, reserving liquid. Add enough water to reserved liquid to make 1/2 cup. Cool well.

Step 3: Preheat oven to 400 degrees. Grease muffin pan with cooking spray or butter.

Step 4: In a medium bowl, cream together butter and sugar until fluffy using an electric mixer at medium speed.

Step 5: Add eggs. Beat 2 more minutes.

Step 6: Sift together flour and baking powder.

Step 7: Add flour mixture alternately with the 1/2 cup raisin liquid to the creamed mixture, beating well after each addition.

Step 8: Stir in raisins.

Step 9: Spoon batter into greased 3 inch muffin pan cups, filling 2/3 full.

Step 10: Bake 15 to 18 minutes or until golden brown.

Serve warm. Makes 12 raisin muffins.
