Triple Cheese Potato CasseroleThis triple cheese potato casserole is made with three different types of cheese, sour cream, and hash brown potatoes. Try these cheesy potatoes for breakfast or brunch.

Often, breakfast is just about the sweets, like doughnuts or coffeecakes. These savory potatoes are a welcome change and make a hearty breakfast recipe that also can be served for dinner or supper.

Breakfast and Brunch Serving Ideas:  This breakfast casserole recipe can be served for brunch with eggs, sliced ham, or beef. You can also serve this cheesy potato recipe as a side dish with eggs, quiche, ham, or pork.

Potato Casserole Recipe

Prep Time:  15 minutes

Baking Time:  60-75 minutes

Ingredient List:


2 cans cream of chicken soup
8 ounces sour cream
1/2 teaspoon pepper
3/4 cup sliced green onions
3/4 cup shredded sharp Cheddar cheese
3/4 cup shredded Swiss Cheese
3/4 cup grated Parmesan cheese
30-32 ounce package frozen hash brown potatoes
2 ounces diced pimientos

Kitchen Equipment Needed:

large mixing bowl
8" x 8" glass baking dish or pan

Instructions:

Step 1: Preheat your oven to 375 degrees.

Step 2: In a large mixing bowl, combine the soup, sour cream, and pepper. Blend well.

Step 3: Stir in the potatoes, onions, pimientos and all cheeses.

Step 4: Spoon into an 8" x 8" glass baking dish in an even layer.

Step 5: Bake uncovered @ 375 degrees for 60 to 75 minutes or until bubbling and golden brown.

Step 6: Let stand 5 minutes before serving.

This potato recipe serves 4.
