Old-Fashioned Potatoes Anna

Potatoes Anna is made with eggs, mashed potatoes, cheddar cheese, onion, and red pepper. Serve this potato recipe for brunch or dinner. Whipped egg whites make these potatoes light and fluffy.

Cheddar cheese, green onion and red pepper make this potato side dish recipe a colorful addition to your breakfast or brunch table.

This is another alternative for a brunch potato rather than hash browns or American fries. The potatoes come out nice and fluffy, not heavy with the addition of egg whites into this baked brunch recipe.

This is a quick and easy brunch food with 15 minutes prep time and 20 minutes baking time. It is also a good way to use up any leftover mashed potatoes you have. Old-Fashioned Potatoes Anna Recipe

Prep Time: 15 minutes

Cooking Time: 20 minutes

This recipe is from my mom's recipe box collection.

Ingredient List:

3 eggs, separated
2 cups cooked mashed potatoes
3/4 cup shredded cheddar cheese
2 teaspoons finely chopped green onion
2 teaspoons finely chopped sweet red pepper
Salt and Pepper to taste

Kitchen Equipment Needed:

2 medium to large mixing bowls
1-1/2 quart glass or ceramic baking dish

Instructions:

Step 1: Preheat oven to 400 degrees.

Step 2: Separate egg whites and egg yolks. Set the egg whites aside. In a medium to large bowl, beat egg yolks by hand or with an electric mixer until lemon colored.

Step 3: Add mashed potatoes, cheddar cheese, green onion, red pepper, salt, and pepper and beat until mixed.

Step 4: In a separate mixing bowl, beat egg whites until stiff peaks form.

Step 5: Fold egg whites into the potato mixture. Add salt and pepper.

Step 6: Place in a greased 1-1/2 quart baking dish.

Step 7: Cover and bake at 400 degrees for 20 minutes.

Makes 4-6 servings. This is another alternative for a brunch potato rather than hash browns or American fries. Very different.
