This
is a simple recipe to make for breakfast or brunch as it only takes
about 30 minutes from start to finish and uses fairly common
ingredients. It is a nice way to use up leftover ham. Chives or small
pearl onions may also be substituted if you do not have any green
onions available.
1-(1lb-8 ounce) small bag of tiny red potatoes 4
green onions, sliced 1-1/2 cups cooked ham 2 -3
Tablespoons butter for frying salt pepper

medium sized bowl large frying pan
Instructions:
Step 1: Scrub and
wash the entire bag of potatoes.
Step
2: Cut the potatoes into small bite size wedges,
about 4-6 pieces for each potato. Place in a medium sized bowl.
Step
3: Slice 4 green onions, both white and green
portions
Step
4: Cube the 1-1/2 cups ham into bite size pieces,
about 1/2" square.
Step
5: Preheat frying pan and melt 2 tablespoons butter
in the pan over medium heat. Do not allow butter to burn. Step
6: Add potatoes and green onion and fry for about
7-8 minutes.
Step 7:
Add in the ham and continue cooking for another 7-8 minutes
or so, until potatoes are tender. Season with salt and pepper.
