Roast Beef Hash Quiche

Roast beef hash quiche is made with eggs, milk, canned roast beef hash, Swiss cheese, Cheddar cheese and green onion. Serve this quiche recipe for breakfast or brunch.

This is one of our family's favorite recipes for quiche and turns out well each time we make it. I actually can't hardly remember when we first started having it, but I think it had to have been sometime back in the early 1980's.

It is hearty enough to satisfy the biggest appetites and yet this quiche still works as a sophisticated breakfast or brunch dish to serve to guests.

I think this actually qualifies as a breakfast casserole, but this is what my family has always called the recipe.

If you are going to serve this casserole for brunch, cut the pieces smaller. Also, it cuts better if it has had a chance to cool down a bit.

If you are not crazy about the celery in this recipe, you can leave it out and add some more chopped onion instead.

Prep Time: 20 minutes

Bake Time: 45 minutes

Ingredient List:

Crust:

2-15 oz. cans Roast Beef Hash*
1 egg

Step 1: Mix together in a large mixing bowl. Pat into the bottom of a greased 9 x 13 inch glass baking dish.

Step 2: Layer the next 4 ingredients on top of the hash crust.

1 cup shredded Swiss cheese
1 cup shredded Cheddar Cheese
1 cup chopped celery
1/4 cup sliced green onion

Filling:

6 eggs, beaten
1-3/4 cup milk
1 cup biscuit mix

Step 3:Mix together well with a whisk until smooth and pour into the pan.

Step 4:Sprinkle with more chopped green onion or dill weed, parsley, or anything you have that will give a color to the top crust when baked.

Step 5:Bake at 350 degrees for 35-45 minutes, until the center is firm. Let stand 5 minutes before cutting.

This reheats very well the next day. Everyone likes this quiche recipe and guys are always surprised at how much they do like it!

* Sausage Hash or Corn Beef Hash may be substituted in this recipe depending on your personal tastes.
