Shepherds Pie Recipe

Shepherds PieShepherds pie, also known as "poor mans pie", is a simple vegetable and beef meat pie recipe that is made with ground beef, corn, potatoes, onions and cheese and makes a hearty breakfast or brunch meal.

This potato recipe is also delicious for any meal of the day. This pie is quick and easy to prepare and only requires a few minutes under the broiler.

*Sometimes it is also spelled sheperds pie. A nice complement to these potatoes would be fresh fruit recipes like Colby Cheese Fruit Salad or Melon and Grape Salad. View other potato recipes like this shepherds pie.

Shepherds Pie

Prep Time: 30 minutes

Bake Time: 10 minutes

Ingredient List:

8 medium potatoes
1 lb. ground beef
1 can peas, drained
1 can sweet corn, drained
1 medium onion, diced
1/3 c. sugar
2 c. shredded sharp cheddar cheese

Kitchen Equipment Needed

Frying pan
13" x 9" glass baking dish

Instructions:

Step 1: Boil potatoes, mash and season to taste with milk and butter. Set aside.

Step 2: Brown ground beef and onion with salt and pepper.

Step 3: When the beef is browned, add peas, corn, and the sugar into the pan. Let simmer until heated through.

Step 4: In 13x9 pan place meat and vegetable mixture in bottom of pan.

Step 5: Cover with mashed potatoes and sprinkle cheese on top.

Step 6: Place in oven on broil setting about 3-5" away from heat source on top rack. Leave oven door slightly open while broiling. Broil 5-10 minutes until the cheese is bubbly or light brown. Watch carefully so as not to burn the cheese.

Serves 8 and there may be some leftovers.
