
These
little spice cookies are made with cake flour, flavored with
molasses, cinnamon, ginger, and cloves and are then rolled in
granulated

Baking

Ingredients:
3-1/4 cups sifted cake flour
3-1/4
teaspoons baking powder
1/2 teaspoon salt
1/2
sugar
1 teaspoon cinnamon
3/4 teaspoon ginger
3/4
teaspoon cloves
1/2 teaspoon baking soda
1 egg,
well beaten
1/3 cup melted butter or other shortening
1
cup molasses
Kitchen Equipment:Large
mixing bowl
Medium mixing bowl
Baking sheets
Step
1: Pre-heat oven to 375 degrees. Lightly grease baking sheets.
Step
2:
Sift the flour once, measure, add baking powder, salt, sugar,
spices, and soda, and sift together 3 times. Place in large mixing bowl.
Step
3: In a medium mixing bowl, combine egg, butter,
and molasses in a bowl. Add flour mixture and blend.
Step
4:
Chill until firm enough to shape. Shape into small balls
about
3/4 inch in diameter. Roll in sugar or tiny colored candies.
Step
5: Bake on a greased baking sheet in a moderate
oven (375 degrees) for 10 minutes, or until done.
Makes
5 dozen little spice cookies.
