Stuffed Green Peppers



Stuffed Green PeppersStuffed green peppers are baked peppers that are stuffed with ground beef, rice, and stewed tomatoes. They are topped with a buttered breadcrumb topping.

Serve this green pepper recipe as part of your weekend brunch menu or evening dinner.

This recipe does take a bit of preparation time, so make sure you have at least an hour available to dedicate to making this delicious dish. These stuffed green peppers are really worth the time and effort, but may be easier to prepare for a weekend brunch or Sunday dinner when you have a bit more time available. Stuffed Green Pepper Recipe

Prep Time:  60 minutes

Baking Time:  45 minutes

Ingredient List:

6 large green bell peppers
1 cup cooked rice
1/2 pound cooked ground beef
2 Tablespoons chopped onion
2 Tablespoons chopped celery
2 Tablespoons butter
1/3 cup hot water
3/4 cup stewed tomatoes

Buttered Bread Crumbs:

1/2 cup bread crumbs
1/4 cup butter

Kitchen Equipment Needed

medium mixing bowl
shallow baking pan or casserole dish

Instructions:

Step 1:  In a medium bowl, mix together the rice, ground beef, celery, butter, water, and tomatoes.

Step 2:  Wash and dry the bell peppers. Cut out the stem end of the pepper. Scoop out the seed and membrane.

Step 3:  Parboil or steam the peppers for 2 minutes.

Step 4:  Drain and stuff with the beef and rice mixture.

Step 5: Top each with buttered bread crumbs.

Step 6: Stand the peppers in a shallow baking pan or casserole dish. If the peppers don't stand level, trim a thin slice off of the bottom to make them level.

Step 7: Bake at 350 degree oven for about 40 minutes, then increase the heat to 400 degrees for 5 minutes more to brown the bread crumb topping.

This stuffed pepper recipe makes 6 servings.
