8 ounces cream cheese, room temperature
3/4 cup apricot preserves or strawberry jam
1/4 cup finely ground pecans

1 loaf Texas toast, French bread, or Italian bread

Batter
4 eggs
1/2 cup milk
1 tablespoon vanilla

Electric Skillet or Frying Pan
Instructions:
Step 1: In a small mixing bowl, combine the cream cheese, jam, and finely ground pecans.
Step 2: Cut the bread into diagonal pieces about 1" thick.
Step 3: Cut a pocket in each slice. Stuff with the cream cheese mixture.
Step 4: In a large mixing bowl, whisk together the eggs, milk, and vanilla.
Step 5: Heat a frying pan or skillet to medium heat. Melt 2 tablespoons butter in the pan.
Step 6: Dip each piece of toast into the egg batter and place immediately into the pan.
Step 7: Brown on both sides until lightly golden brown.
This stuffed French toast recipe yields 8 servings.
To make Strawberry Stuffed French Toast, substitute the apricot preserves with the same amount of strawberry preserves. You may also use any other flavor fruit jam or preserves in this recipe.
