Taco Casserole

for Brunch or Dinner

An easy taco casserole made with ground beef, black beans, salsa, and tortilla chips. Serve as a brunch casserole or for a one dish dinner.

For those of you who dislike pancakes and waffles because they leave you feeling stuffed, try this breakfast casserole for a refreshing change of pace.

After making this, I think I have a new favorite recipe and can't believe I have not made this before. It is a very satisfying meal and high in protein as well.

Just a word of warning...this one has a bit of spice to it, with the flavoring from the taco seasoning. Keep in mind who your guests are and if they like spicier food.

Keep the side dishes simple. A fruit salad and juice are about all you will need for a complete meal. Perhaps a little something sweet at the end would be a nice finish, but it is not completely necessary.

This is also an easy recipe for dinner. Even my 9-year old son liked it!

Prep Time: 25 minutes

Baking Time: 20 minutes

Ingredient List:

1 pound ground hamburger
1 Tablespoon olive oil
2 teaspoons red pepper flakes
1 small onion, chopped
2 cloves garlic, minced
1 package taco seasoning
1/2 cup water
1 can black beans
1 cup mild or medium salsa
1 cup shredded cheddar cheese
1 bag corn tortilla chips

Kitchen Supplies:

skillet or frying pan. 9" x 13" glass baking dish

Instructions:

Step 1: Preheat oven to 350 degrees.

Step 2: Heat the olive oil in a skillet. Add the pepper flakes, onion, and garlic and sautee until the onion is softened.

Step 3: Add the ground beef, taco seasoning, and water to the skillet. Break up the meat with a spatula and cook until the meat is browned.

Step 4: Drain and rinse the black beans in a strainer. Add the beans and salsa to the mixture. Cook until everything thickens.

Step 5: Line the bottom of a 9" x 13" glass baking dish with tortilla chips. Slightly crush them so there is a flat layer of chips and the pieces are bite size.

Step 6: Spoon the meat mixture over the tortilla chips. Sprinkle with shredded cheddar cheese.

Step 7: Bake for 20 minutes at 350 degrees or until the cheese melts.

Step 8: Serve with sour cream, additional salsa on top, and chips on the side.

Tips:

If you really want to spice up this taco casserole, add some pickled jalapeno peppers to the dish before you put on the shredded cheese.

You can also top the casserole with diced tomato and shredded lettuce after it is done baking. It will look a bit more festive from the added colors.
