Tomato Recipe with Olive Oil and Basil
A brunch tomato recipe made with fresh ripe tomatoes and marinated in a sauce of olive oil and basil.
Serve these elegant and tasty tomatoes as a side dish for your brunch menu.
This vegetable recipe adds a wonderful aroma to your brunch table and a bit of color as well.
Smaller tomatoes such as Roma work better for individual servings, but if this is for a brunch buffet
where your guests will be helping themselves to one or two slices, feel free to use larger tomatoes such as Heirloom or Beefsteak.

Marinated Tomato Recipe for Brunch
Printer Friendly Recipe
Prep Time: 15 minutes for actual prep, but
make a day ahead to allow for marinating time.
Ingredients:
4 large ripe tomatoes or 8 Roma tomatoes
(figure about 1/2 large or 1 small tomato per person)
1/3 cup red wine vinegar
1/3 cup salad oil
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon basil
1 clove garlic
2 Tablespoons finely chopped onion
2 Tablespoons chopped parsley
Kitchen Equipment Needed
covered jar or dish
shallow baking pan or glass baking dish
Instructions:
Step 1: Put all ingredients except tomatoes into a covered jar or dish and chill several hours.
Step 2: Slice the tomatoes into thick slices and place them in a single layer in a shallow dish.
Step 3: When chilled, remove the clove of garlic from the marinade.
Step 4: Pour the marinade over the tomatoes to cover.
Step 5: Let sit for 3 hours.
Makes 8 servings.
